1 14 oz can or jar of Artichoke Hearts, drained and chopped
½ Cup Onions, chopped
2 Tbs. Bacon Drippings
1 Clove Garlic
4 Eggs
¼ Cup Bread Crumbs
½ lb. Cheddar Cheese, shredded
2 Tbs. minced Parsley
½ tsp. Salt
Pepper to taste
¼ tsp. Oregano
Dash of hot sauce

Sauté onions in bacon drippings. Beat eggs until frothy. Add all other ingredients. Bake at 325 degrees F. for 20 to 30 minutes, until set. (Pan 11x7x1½) Cool cut into 1 to 1½ inch squares. Can be made ahead and reheated.
